It’s called “crossing the bridge noodle,” and it’s the most famous dish from Yunnan.  Shi Miao Dao is a famous chain from Yunnan that specializes in this noodle soup. They have more than 750 locations worldwide. In English, Shi Miao Dao is called Ten Seconds Yunnan Rice Noodle. Crossing the bridge noodle, the dish itself, is basically a kind of deconstructed hot pot. The broth comes boiling in its own hot stone bowl, while the toppings/ingredients and noodles are served on the side. You add all of the toppings to the boiling broth to make your own bowl of Yunnan rice noodle soup. The ingredients cook very quickly so you can enjoy right away. The restaurant offers four preset combos with prices ranging from $11.59-$13.99, so it’s very affordable! Pictured is the beef with kimchi broth, which comes with beef and all the toppings like corn, tofu, egg, and ground pork, etc. If you don’t want to cook yourself, the restaurant also sells a variety of other noodle soups. My favorites were the chicken noodle (excellent!!!) and the spicy beef shank noodle, which reminded me of Bun Bo Hue.  This is a great option to try when you’re craving noodle soups!
